Chocolate Powder Recipes Collection

CHOCOLATE is an essential ingredient in quality confectionery.  However it is a product not easy to work with due to its high cocoa butter content (up to 31% in couvertures) that obliges to melt it before its use.

CHOCOLATE POWDER is real chocolate (with all its flavour) but with fat reduced (only 12%). This confers the following advantages:

  • it does not need to be melted

  • it is well dosified as it is not sticked in the melting pot

  • it does not need special tools and the ones used have an easy cleaning

  • it is easily mixed with any other ingredient, liquid or solid for its powder form

  •  it is very suitable for low fat-low calories desserts

  • it is stable to temperature variations

Note: although chocolate powder is normally used to describe the simple mixture of cocoa powder and sugar, in reality this mixture has cocoa flavour instead of the richness of the chocolate flavour, that our chocolate powder has, because that simple mixture has not been conched.
